QUICK & SIMPLE DANDELION DETOX SALAD

Dandelion greens–available in your own organic back yard or in the supermarket–are bursting with valuable carotenoids and vitamins, a true tonic that will enliven and nourish you and your family.

Nutritionally, dandelion is contains a high iron content, quadruple the carotene content of lettuce plus rich supplies of calcium, potassium, and vitamins C and E.

Continuing with the  hard work of detoxing and cleansing that many of you started at the beginning of the year, here is a great detoxifying salad you can enjoy now or in the Spring when you can pick them in the back garden.

INGREDIENTS
3 cups dandelion leaves washed and torn into bite sized pieces
2 thin slices red onion, separated into rings and tossed lightly in with the dandelion.

DRESSING

2 tablespoons olive oil
2 tablespoons flaxseed oil
2 tablespoons apple cider vinegar
1 teaspoon anise seed (optional)
2 teaspoons fresh peppermint, chopped
2 teaspoons tamari
2 ½ teaspoons honey mustard or miso

1. Combine all ingredients and whisk thoroughly to blend, then drizzle onto the salad.

WHAT TO DO WHEN PICKING DANDELION

1. On a sunny day, grab a basket and venture out on a foraging expedition. Be sure to choose dandelions leaves from areas that have never been sprayed, and are at least six feet from roadways, to avoid heavy metal contamination.

2. When you have collected as much of the young tender leaves as you like wash and dry them gently.

3. Prepare  by chopping, roughly tearing or expertly slicing the leaves and enjoy with a dressing of your choice.

To keep your detox salad interesting this recipe can be added to with a variety of ingredients including, tomatoes, avocado, seeds and nuts even berries (strawberries, blueberries). The dressing can also be modified to a simpler one of oil and balsamic vinegar feel free to mix and match and come up with your own recipes as you think of the different ways to enjoy this powerful detoxifying leafy green.
